Chargou (Sar) Tajine with Vegetables and Coriander

Ingredients

4 people

  • 500 g fresh Chargou (Sar), cut into pieces
  • 2 carrots, sliced
  • 1 zucchini, diced
  • 1 red bell pepper, cut into strips
  • 1 peeled tomato, chopped
  • 2 tbsp extra-virgin olive oil
  • 1 garlic clove, crushed
  • 1 tsp cumin
  • 1 handful fresh coriander, chopped
  • Sea salt and mild pepper

Preparation

  1. In a tajine or casserole, heat olive oil and garlic.
  2. Add vegetables and spices, simmer for 10 minutes.
  3. Place the Chargou pieces on top of the vegetables.
  4. Cover and cook gently for 25 minutes.
  5. Sprinkle with fresh coriander before serving.

Tip

Add a few green olives to enhance the Mediterranean flavor.

Variation

Replace zucchini with turnip for a more traditional touch.
