Preface

Cooking to heal, without giving up pleasure.

There are cookbooks that teach gestures. Others that tell stories. This one does both.

It was born from a simple observation and a great hope: our food can become daily care, an act of prevention, a gesture of love for oneself and for others.

At Family Clinic, we have accompanied for years patients with chronic conditions: multiple sclerosis, rheumatoid arthritis, diabetes, digestive disorders, inflammatory diseases… All share a common reality: their daily lives are disrupted, their relationship with food weakened, their pleasure in eating often diminished. And yet, pleasure is an essential condition for sustainable care.

This book was born from this fertile tension between therapeutic rigor and joy of living. It offers hypotoxic cuisine — gluten-free, dairy-free, refined sugar-free — but full of taste, textures, colors, and culture. A cuisine that heals without excluding. That adapts without impoverishing. That transforms without betraying.

We chose to reformulate 100 everyday recipes, then propose 100 more for enjoyment, taking into account the realities of the Moroccan market, local taste preferences, and the economic and practical constraints of families. Each recipe was designed to be simple, reproducible, digestible, and emotionally satisfying. No impossible ingredients. No rigid protocols. Just real foods, caring gestures, and a clear intention: to restore health through the pleasure of cooking.
