Stewed Beef with Chickpeas and Cumin

Ingredients

4 people

  • 600 g lean beef pieces (shank or chuck)
  • 200 g cooked chickpeas
  • 2 ripe tomatoes, diced
  • 1 mild onion, sliced
  • 1 tsp ground cumin
  • 1 tbsp extra virgin olive oil
  • Sea salt and mild pepper
  • A few sprigs of fresh coriander

Preparation

  1. Sauté the onion and beef pieces in olive oil over low heat.
  2. Add the tomatoes, chickpeas, and sprinkle with cumin.
  3. Cover with a glass of water and simmer gently for 1 hour.
  4. Garnish with fresh coriander before serving.

Tip

Add a few carrots to enrich fiber content and color.

Variation

Replace beef with veal for a milder version.
