Green Lentil Soup with Coriander

Ingredients

2 people

  • 150 g green lentils
  • 1 carrot
  • 1 garlic clove
  • 1 handful of fresh coriander
  • 600 ml water or vegetable broth
  • 1 tbsp olive oil
  • Sea salt, pepper

Preparation

  1. Rinse the green lentils.
  2. Dice the carrot and chop the garlic.
  3. Cook lentils + carrot + garlic in water for 25 minutes.
  4. Blend with coriander and olive oil.
  5. Season to taste.

Tip

Add a pinch of cumin to enhance the flavor.

Variation

Replace coriander with flat-leaf parsley.
