Cucumber with Plant-Based Yogurt and Mint

Ingredients

2 people

  • 1 large fresh cucumber
  • 150 g plain plant-based yogurt (soy or coconut)
  • 1 handful of fresh mint leaves
  • 1 tbsp extra virgin olive oil
  • 1 pinch of sea salt
  • A squeeze of lemon juice

Preparation

  1. Wash and peel the cucumber, then slice it into thin rounds.
  2. Chop the mint finely.
  3. Mix the plant-based yogurt with olive oil, lemon juice, and salt.
  4. Add the cucumber slices and mint, and mix gently.
  5. Serve well chilled.

Tip

Add a few pumpkin or sunflower seeds for extra protein and crunch.

Variation

Replace mint with coriander for an oriental touch.
