Roasted Butternut Squash with Zaatar and Lemon

Ingredients

2 people

  • 1 small butternut squash
  • 1 tbsp extra virgin olive oil
  • 1 tsp zaatar
  • Juice of half a lemon
  • Sea salt

Preparation

  1. Peel and cut the squash into cubes.
  2. Mix with olive oil, salt, and zaatar.
  3. Roast in the oven at 180°C (350°F) for 25 minutes.
  4. Drizzle with lemon juice before serving.

Tip

Add a few pomegranate seeds for a sweet and colorful touch.

Variation

Replace zaatar with fresh thyme.
