Chicken en Papillote with Lemon and Thyme

Ingredients

2 people

  • 2 free-range chicken breasts
  • 1 organic lemon (slices + juice)
  • 4 sprigs of fresh thyme
  • 1 tbsp extra virgin olive oil
  • Sea salt and mild pepper

Preparation

  1. Preheat the oven to 160 °C (320 °F).
  2. Place each chicken breast on a sheet of parchment paper.
  3. Add lemon slices, thyme, and drizzle with olive oil.
  4. Close the papillote and bake for 25 minutes.
  5. Serve hot with a drizzle of fresh lemon juice.

Tip

Add a pinch of cumin for a warm Moroccan touch.

Variation

Replace thyme with fresh coriander for a more local flavor.
