Pageot in Papillote with Lemon and Parsley

Ingredients

2 people

  • 2 fresh pageot fillets
  • 1 lemon (juice + a few thin slices)
  • 1 tbsp extra-virgin olive oil
  • 1 small garlic clove, crushed
  • 1 handful fresh parsley, chopped
  • Sea salt and mild pepper

Preparation

  1. Preheat the oven to 180 °C.
  2. Place each pageot fillet on a sheet of baking paper.
  3. Drizzle with lemon juice, add slices, garlic, and parsley.
  4. Season lightly, then close the papillote.
  5. Bake for 20 minutes.

Tip

Add a few fennel seeds to enhance digestive freshness.

Variation

Replace parsley with coriander for a more oriental touch.
