Warm quinoa with green vegetables

Ingredients

2 people

  • 100 g quinoa
  • 1 small zucchini
  • 1 handful of green beans
  • 1 handful of arugula
  • 1 tbsp extra virgin olive oil
  • Juice of half a lemon
  • A pinch of sea salt

Preparation

  1. Rinse the quinoa and cook for 12 minutes in twice its volume of water.
  2. Drain and let cool slightly.
  3. Steam the green beans lightly (keep them crunchy).
  4. Cut the zucchini into small cubes, raw or lightly blanched.
  5. Mix the quinoa with the vegetables, olive oil, lemon juice, and salt.
  6. Add the arugula just before serving.

Tip

Add a few sunflower seeds for extra crunch.

Variation

Replace arugula with parsley for a milder flavor.
